from the sculpting on the handle to the tapered tang and nice grinds

in that the handle material pieces have shrunken a bit and there are some gaps in the handle pieces

This is a vintage Sabatier Jeune stainless chefs knife in excellent used restored condition. The size of the blade measures 200 x 37mm or 7 7 8 x 1 7 16, and is perfect for a line knife or a general purpose large petty small chefs knife. Im unsure of the date, my guess would be 70s, but Sabatier Jeune started making stainless in the 50s so its hard to know. Cosmetically the condition is pretty great for a vintage knife of this type,
